I just got back from the market and was reminded yet again why I love this time of year… the fresh fruit! Berries, stone fruits, all so fresh and reasonably priced! And since summer is the time when it’s so easy to socialize and visit with friends, what better time to turn these treasures into desserts? Especially when it’s a perfect way to get a cool dessert that helps you stay hydrated.
I don’t know how you could do anything easier or more refreshing than a watermelon slushie like this one from the Food Network:
Puree watermelon, freeze, and serve? I can do that!
Crumbles are a great way to use whatever happens to be in season, and you can do a lot with the topping to reduce the sugar to suit your needs. I love Sally Schneider’s summation of a crumble to be a lazy man’s pie.
In the words of Donkey, “Everybody loves parfaits!” Once again, you can use any combination that works for you. Whipped cream from scratch is a perfect swap for the ice cream in this recipe, and I like the Frugal Girl’s granola recipe (which I blogged about here). This recipe uses balsamic vinegar as a macerating agent alone with the sugar, and I very much approve of that. 
and don’t forget — you can always just layer fresh berries or other fruit with whipped cream. Good stuff!
Fruit skewers are pretty and easy, and so healthful and fun to eat — and a lot easier than fruit salad to serve!
